Capsicum Omelet


Ingredients

Eggs - 2
Capsicum( Bell Peppers) - 1/2 cup chopped
Haldi/ Turmeric powder - 1/4 tsp
Pepper powder - 1/2 tsp
Salt to taste 
green chilli 1 no. (or) red chilli pwd 1 tbsp 
coriander pwd (dania) 1 tbsp)
masala pwd 1 tsp 
Vegetable oil - 1 tsp +1 tbsp

Method
  1.  In a dosa tawa add 2 tbsp oil and add onion pieces, and fry for 2 minuts.
  2. Now add capsicum pieces, ginger-garlic paste and fry. to this add salt, red chilli pwd, dania pwd and fry for 1 more minute. and put aside.
  3.  Beat the eggs in a bowl and add above fried mixture and 1/2 tbsp masala pwd, pepper pwd.
  4. Adjust salt and chilli pwd and mix well. 
  5.  Grease a tsp of oil in a frying pan and pour the egg mixture and cook on a lower flame.
  6.  Flip the omelette after 2-3 mins and cook the other side too till you get a light golden color.
Note : Add few drops of milk to get more fluffy  omelette.

Tomato Chicken Fry


Ingredients:
  •  chicken (skinless,boneless)  1/2 kg
  •  ginger-garlic paste 1tbsp,
  •  onions    3 NO.(ground to paste)
  •  tomatoes  2 NO( ground to paste)
  •  green chillies 2 NO.(SPLIT)
  •  chilli powder  1tbsp
  •  salt (as per taste)
  •  
  •  3 to 4 cloves
  •  2 cardamoms
  •  1/2 inch Cinnamon (or) garam-masala pwd 1tbsp
  •  
  •   oil  3tbsp    

For Marination
  •  curd  1/2 cup
  •  ginger garlic  paste  1tbsp
  •  chilli powder 1tbsp 
  •  haldi 1/2 tbsp
  •  lemon juice 1/2 lemon

For Paste:
  • cashews    10 no's
  • khas khas 1 tbsp
  • dhaniya (whole) 2 tbsp
  • jeera        1 tbsp

      (Make a fine paste adding sufficient water)

Method:

  1. Clean and wash chicken pieces and marinate (with 1 tspn ginger garlic paste, 1 tspn  chilli powder, 1/2 tspn  haldi, half cup curd and lemon juice.
  2. And keep it aside for 15 - 30 minuts.
  3. Boil the marinated chicken in a pressure cooker (or in a pan) for 3 to 4 whistles.  
  4. Take oil in a pan.  Heat and add cloves, cinnamon and cardamoms.
  5.   When cloves starts spluttering add 1 tea spoon of ginger garlic paste, fry for few sec.
  6. And add  GREEN CHILLI..  Stir for few sec. 
  7. Add the Onion paste.  Add  salt and fry until the paste starts leaving oil. 
  8.  Now add tomato paste and cook for 2 to 3 mins 
  9. Add the boiled chicken pieces.  Add the Kaju,khas khas, jeera and dhaniya paste. 
  10.  Mix well and fry until the curry becomes dry and start leaving oil in a medium flame.  
  11. Chicken Fry is ready serve and garnish with lemon, onion rings and fresh coriander and mint  leaves.........
